In today's video, we bake a lovely moist carrot cake with a beautiful cream cheese frosting.

Recipe:

4 eggs
1¼ cups oil (we used olive oil)
1½ cups sugar
2 tsp vanilla extract
2 cups flour
2 tsp baking powder
½ tsp salt
2 tsp cinnamon powder
3 cups grated carrot
3 slightly overripe bananas, mashed

In a large mixing bowl, lightly whisk the eggs. Add the sugar, oil and vanilla extract and beat together until well combined. Mix the baking powder, salt and cinnamon powder into the flour, and add the to mix. Fold in until well mixed. Add the grated carrot and the mashed banana, and mix in. Grease a cake tin, and dust with flour before pouring mix in. Bake in an oven preheated to 180º C for 40 - 50 minutes, or until a skewer inserted into cake comes out clean. Allow to cool for a while in the cake tin before removing.

Cream cheese frosting:

120g cream cheese
80g butter at room temperature
1 tsp vanilla extract
1½ cup powdered (icing) sugar
Zest of one orange or lemon (optional)
½ cup crushed walnuts or pecan nuts for topping (optional)

Beat the butter and cream cheese, and the zest if using, together until smooth. Add the vanilla and sugar, and beat together. If the mixture is too thick, ad milk, a teaspoon at a time and mix until at desired thickness. If mixture is too runny, add icing a tablespoon at a time and mix until at desired thickness. Pipe, or spread frosting onto cake, and sprinkle over nuts if using.
