Did you know it's only called a pineapple bao because the topping ressembles the skin of a pineapple?? Enjoy this Chinatown Bakery classic in your very own home. This will be the only recipe you'll need to indulge in delight. There's nothing like a fresh-out-the-oven Bolo Bao.

RECIPE
*I highly recommend using a scale to measure in grams*

Roux
20 g Flour (2.25 TBSP)
100 g water (2/3 Cup)

Dough
280g bread flour (2.25 Cups)
7g instant yeast (2 tsp)
40g sugar (3.5 TBSP)
1/2 tsp salt
1 egg
50 g milk (1/3 Cup)
30g Cream (1/8 Cup)
50 g Softened Butter (3.5 TBSP)

Topping
70g Butter (4 TBSP)
70g Sugar (5.5 TBSP)
1 Egg Yolk
100g Cake flour (3/4 Cup+1TBSP)
1/2 tsp baking soda
1/2 tsp vanilla extract
1/2 tsp baking powder

TIME
0:25 - Roux
0:52 - Bao Dough
2:03 - Topping
3:10 - Forming Bao
4:16 - Rolling out Topping
5:00 - Baking Bao
6:10 - Sexy Bao Time
